Traditionally Mozzarella di bufala Campana (D.O.P, denominazione di origine protetta) is Italy?s first ever vegetarian mozzarella.
Usually made using animal rennet, which is the stomach tissue of a slaughtered newborn calf, by replacing the animal rennet with a vegetable rennet produces a cheese which is the first mozzarella in the UK suitable for vegetarians.
The Belmosa mozzarella is still made using 900 year old traditional methods in the Campana region of Italy, by a family owned company that has been creating the cheeses for more than 125 years.
Mozzarella Belmosa has the same texture of traditional mozzarella, but with herbal undertones.
The Belmosa mozzarella can be enjoyed by vegetarians and non-vegetarians alike, opening up its potential uses by vegetarian cultures in cooking meaning a whole new range of cuisine opportunities awaits.
Using vegetable rennet means that Belmosa mozzarella has a much lower cholesterol level than normal mozzarella, and buffalo milk is significantly lower in cholesterol as well, when compared to cow, sheep or goat?s milk.
Belmosa mozzarella is also calcium rich and the buffalo milk is a rich source of iron, phosphorus, Vitamin A and protein, allowing it to me marketed as a ?healthier? cheese.
Unlike the modern dairy cow, the buffalo can thrive without the need to use high levels of concentrated feed.
Grass, clover and straw make up the bulk of a buffalo?s diet, no bone meals, fish meals or genetically modified feeds are ever fed to buffalo.
Italian chef, Aldo Zilli, has provided a series of classic recipes on the inside sleeve of the packaging of the new cheese, which aims to showcase the versatility of Belmosa vegetarian mozzarella, such as his Tricolore Salad dish of ripe tomatoes, avocado, wild rocket, basil and Belmosa mozzarella.
